Chef Fikri Jalil, the visionary behind Galanggal, finds inspiration in the cuisines of Eastern Europe and the Middle East. After more than a decade of honing his craft in prestigious kitchens, working alongside renowned head chefs, Chef Fikri embraced the intricate use of spices and complex flavors that define these culinary traditions. This experience led him to create a distinct fusion, marrying Mediterranean influences with Malaysia's vibrant local produce.
Producing traditional European and Middle Eastern dishes often requires hard-to-find ingredients, especially in Ipoh. Rather than relying on imports that would drive up costs, we took a different route—improvising and reimagining these dishes using the freshest local ingredients. By blending traditional recipes and cooking techniques with the flavors inherent to Ipoh’s local culture, our dishes become a fusion of imagination and heritage. “It’s fun to experiment with local ingredients and flavors,” says Chef Fikri.
At Galanggal, we aim to offer more than just food—we provide a culinary adventure, infusing every dish with creativity and distinctive tastes, bringing more color to the mainstream culinary landscape.
A key philosophy at Galanggal is our commitment to Farm-to-Table practices. As a chef, Chef Fikri sees it as his responsibility to support and promote local farmers. We work closely with local producers and even grow our own salad mix and vegetables. While some ingredients, like lamb shank and steak, are still imported from Australia for quality reasons, we strive to reduce imports and focus on sourcing locally whenever possible.
This approach is part of what we call "From Local to Local." By maximizing purchases from local farmers and employing local talents, we believe we’re doing more than serving great food—we’re contributing to the prosperity of our community. Supporting local means boosting our local economy, which in turn fosters a stronger, more vibrant community and happier customers.
